In looking through the documentation I didn't see provision to connect a z-probe circuit and avoid using the alligator clip? Is that possible?

Not supported in the current version. certainly in plan to implement in the future.
The documentation is bit old. Lot of updates have been added to the software recently. Please check the videos.
